Rip

Taking or extracting music or video data from one source and copying or re-encoding into a compressed format. The most common example is copying music CDs into MP3 format. The better CD ripping programs are those that disable freedom of access to a given media including Digital Rights Management and the various types of computer CD ROM hardware.
The process defined as "ripping a CD" means that data from a CD is copied to another storage media or platform, for example to a HDD. From there, the data can be modified.

Audio
After the data from an audio CD has been "ripped" it remains on the harddisk as WAV files. The WAV files can be encoded to a lossy (ie. OGG, MP3) or lossless (ie. FLAC) audio format.
Software for ripping audio CD's
- Audiograbber A commercial, feature-rich CD ripper.
- CDex - free, open-source, easy-to-use and a sourceforge project. Also copies directly from soundcard and in a variety of audio formats.
- ExactAudioCopy - A CD-ripping tool free for non-commercial use. The best tool available since it features a secure mode which leads the rip either being perfect or no rip at all.
- FreeRip - great Adware-supported CD-ripping tool. Includes auto-encoding for Ogg Vorbis, MP3 and WAV formats. Rips directly from the CD, not the sound-card so there is a perfect digital copy.
- iTunes - excellent audio/video program that includes a fast and easy audio Ripping tool.
- NeoAudio - another free audio tool with a varity of features incluing CDDB access and various formats (including MP3).
- Winamp - latest version (5.0) contains a CD-Ripping program. Requires registration for use beyond around 4x speed rips.
- [StreamRipper] - Open Source (GPL) application that lets you record streaming mp3 to your hard drive.
- cdparanoia - A CLI application to rip CD's (aka Paranoia)

- The operating system in BeOS treats CD tracks as WAV files so they're a snap to transfer to most other formats.

Software for ripping software CD's
+FIXME: I have no idea about Windows software and only CLI utils like "dd", "mkisofs", and "mount -o loop" are things which flow from my mind regarding *NIX.
